You just need a line of fortified mountaineers on the western front, spanning to the natural break in the line (big ass lake or whatever), then on the Eastern front a mixed army of infantry and Cav/Mot/LArm. Rush the Eastern seaboard and hold the Western line, pushing out slowly whenever the yanks shift their forces.
If you attack early enough, and move on their VPs quickly enough, the USA won't be able to produce enough effective units to counter attack. Leaving it too late will allow them to use their national focus tree to unlock their true might, at which point you'll lose.
It used to be much easier before the DLC, but it's still possible to annex the USA before they join the Allies, giving you immense production power to steamroll through South America, attack Portugal via Cape Verde and island hop back to their cores. Then use Portugal as a base to further the Canadian empire.

In case ya havent noticed at any point in time someone goes to war the AI runs off and joins a faction.
I think Italy-Ethopia and the Japan-China wars are the only exception.
Italy has always has always show how dumb the AI is. I can not count how many times France rolls through them because it moved all troops towards Greece. Sounds like you started the war early so it went the opposite way.
You are better off not playing the late game anyways. Nobody has resources for anything anymore because of occupation penalties ate up resources, then the three factions pretty much kill trading in general.
