You may be interested in Expert AI 2.0, an AI improvement mod, and Black Ice, a popular mod intended to greatly expand the micro-management areas of the game, originally developed for HoI3 and now being developed for 4. There are the usual aesthetic mods as well, things like the Coloured Buttons, Division Icons and Flavour Names mods, which all provide small aesthetic improvements to the game.

In Fatherland, Germany is quite overpowered so I would suggest playing as China and trying to expand your influence and ideology. The developer is now making custom focus trees, and proxy wars will be implemented so it'll be definitely fun fighting for supremacy in a alternate world.
In Kaiserreich, playing as either Russia or Canada would make for a good game. Don't be fooled, Canada can become quite the powerhouse in Kaiserreich!
