New to the game, question on the largest ships
So I LOVE big ships (Capital pilot in EVE) and I see some here are pretty beefy.
Question I have is how long does it take to be able to afford/pilot one? Naturally it's a single player game so vastly faster and non-comparable but I still want to feel like I've earned the right, if that makes sense.

it a single player game. so much easier

Like there an abandon one you can grab in the first 5 minute if your really daring to dive straight into Xenon Territory to grab the abandon ship and then haul it back to safety

As Wraith points out, you can be flying a large ship very quickly... There are a few options.

Salvage the abandoned one, gather up a boarding crew and steal one... Or if you're really that way inclined, it's not even -too- rough to get chummy with one of the governments and just buy one... But I wouldn't recommend doing that.

The largest ship is Asgard which is 3 kilometers long... which can take a bit of time, as you need to either build it or steal it by boarding. Stealing is faster.

If you finished Timelines, then there are derelict capitals in the game you can grab right at the start.

Playing casually? You can probably get 10-30 hours before feeling comfortable getting a capital ship. There are a lot of smaller things to invest in before that. Speedrun? 10-15 minutes, or about 1-2 hours for a particular ship.

Probably one of the biggest noob traps is over investing in an M ship. You can easily dump 5-10mil credits into a fully kitted M ship, but that kind of money will get you some civilian level L ships.

Depends on what you're planning to do with it. As said above, a civilian L costs less than M-sized warships.
You could start a custom creative game start and give yourself any ship you want if you just wanted to test drive it. You can literally start off with any size fleet and ship from the very beginning. It will get a modified tag for the game, which really doesn't affect anything at all.

There is one free capital ship you can grab from the start.
Only read below if you do not mind spoilers.
Find and explore the system Faulty Logic VII. There is an abandoned Odysseus laying around that you can capture. Be careful with the Xenon and mines in the system, it is a pretty hostile place.

This is all great info. I'm definitely growing my knowledge first and looking forward to jumping in one, but I'll go up in ship sizes first.

I need to reinforce that you need to be cautious in that spoiler sector...
The dangerous objects in there remain to be a serious health hazard to anyone, even if some (more or less friendly) faction manages to claim said sector.

Also, don't get too excited about what you find.
Its loadout can be very random.

Depending on your owned DLCs just buying one of your choice doesn't take too long, if you have the terrans or Boron DLC, their space is completely safe for mining in(except the terran's asteroid belt, head to saturn or the oort belt), nearly limitless passive income, with very little investment, as even small mining ships are perfectly safe to do their thing forever.

And the only real XL Ship is the asgard, and this ship is hard to get.

Well, in all honesty, the Asgard isn't hard to get, it takes a while, but it's mostly waiting for money to build up. There are hard to get ships in game, but the Asgard isn't one of them. The Xperimental shuttle for example, getting that by yourself(not cheating like I did, lol) is fairly hard.
