Personally I like pulse.
Just shoot the crystals with a low powered gun, such as a bolt. Get in as close as you can and shoot the crystal until it breaks. Be ready to suck in the floating shards...
Here´s a tip...
Be quick and can zoom in to the crystal nub after it has broken, remain there for a few seconds and you may score a few more shards. It´s random, but you will score at least 50% more most of the time and can sometimes double the harvest.

Regarding my original question. I mean once I am in a mining ship with the intention of destroying the asteroids to collect the ore... do I need to shoot off the crystal, or will I collect them during the ore collection phase?
If you break down a asteroid/rock you will shatter all Crystals that are attached to it.
So no you wont get crystals for free in the process.
This said from time to time breaking up rocks does reward you with unstable crystals tho.
On the comment to not use a mining laser for Crystal farming this is good and bad advice S Size mining laser are precise enough to be used with good aim to break of crystals M and L Size not so much.
If you struggle for cash for what ever reason the money you make from a single miner wont compensate dedicated crystal mining.
If you scale up your regular miners thought (not in size but numbers) you end up with a passive steady income that returns better profits then crystal mining.
Maybe unrelated at first but something to consider there are two activities related to mining that have a profit cap so to speak Crystal & nVidium mining one is capped by the search time the other by the fact that no industry exists that needs it as resource both can be considered high profit goods.
If you want to personal mine nVidium would be a good starter this said be careful not to oversupply as the profit margin shrinks quick.
