If you want to explore your ships, you can do that in No Man's Sky. And even design the interior.
Oh but there is the Astrid (added by the Avarice DLC) which is a unique M ship with interior and several rooms without the need of using the elevator.
Larger ships have exterior (or in some cases semi-interior) docking bays for smaller ships.
It's enough for basic levels of immersion, but don't expect to be able to open up your hold and see your cargo.
And there's always the Astrid, which has a pretty nice and sizable interior!
The pool has water, but the artificial gravity keeps it in the pool rather well (it does ripple, though)
If you have enough service crew, occasionally one or two will go behind the bar to stand, but honestly, I'd feel bad for anyone that had to stay there all the time... I leave my game idle for hours sometimes ;)

1. Small ships have interiors such as the cockpit area you walk right into and sit in the chair.
2. Now as for large ships like battleships and carriers, etc, where you'd expect crew quarters, jail, mess, etc, it works like this... You walk to your ship, up a ramp, and go into a Lift (I always saw it as a lift or escalator tube like in Start trek, not a teleport) a second later you come out into the crew quarters, or jail, or mess or even the main cockpit area.
No load screens. I suppose the Lift could be a very clever 'loadscreen;.
The only game I know that attempts to make functional use of all its rooms is the upcoming Starship Simulator, and I have my doubts if that game will ever make it out of alpha. The developer has many lofty goals, and that may end up being his downfall. Otherwise, almost all ship interiors in the games I play are cosmetic. The one exception is Space Engineers, but even that is up to the player.
A funny one too if someone gets on the lift with you you get dragged with them.

It's so mind blowing the first time you dock onto a giant moving spaceship while you're both hurtling through space at 2000 km/s with stuff whizzing by.. then you get out of your ship, standing on the docking platform and look up.. still stuff whizzing by. . . cuz the ship you docked on is flying super fast lol.
there's a storyline mission that involves docking with one of these big ships while it's on the move, i believe. Or at least it was some mission I obtained and never saw again.
This is one of those game where they get the formula for gameplay, upgrading, open world (universe) spot on. Not quite as addictive as other similar games due to a fairly steep learning curve, but honestly this is one of those games where you are plotting what to do while taking a shower, or taking a bus or even while your boss is screaming at you. So much to see and do.
But that is not main force, main force is build your empire (station, fleet, ect) or travel solo if you wish doing mission here and there in the space, that is.
Yeah but this isn't finished and modders could do stuff now with the brig and bridge. I think we're all just enjoying the journey. Hell of a game. The modders will go nuts on this. Epic levels of mods.
