Even though i prefer other X games, X4 still has a very active community. So, you'd better start with this and you'll be able to ask questions and get answers in a "timely manner"
Well, in the case of station building, and I mean proper designed stations, everything before X4 is actually a nightmare (especially without mods).
X3TC (with some comfort mods) is something i personally still prefer in some regards over x4. X3TC did improve a lot over X3. So starting with X3TC i would say is also something you could do.
I would suggest playing either of those if are new to the whole game. X1 and X2 are very old and i dont think those are a good starting point unless you are very nostalgic for old style games.

you said that the X4 UI is the best of the bunch...
However, the points of the others are valid: X4: Foundations has an active community, so you'll find answers easily.

Terran's have the easiest faction with a simplified economy and they are protected from external threats.
I do like jumpdrive in x3 and x2 to get away from enemies, even you are in very slow snail ship, but X4, well you can't get away from enemies in slow ship, it's bound to blow up, unless you are in fast combat ship.
I`d love to recapture that moment of taking the box home after randomly finding it in a game store, that first moment when i spoke to the teladi captain will stay with me forever.
You could then go through them one by one seeing the progression and begin to understand why some of us love X games so much
