You answered your own Question already, this only happens when you manually Dock those Ships.
The very moment you leave the Controll Station the Captain will resume his previous Orders and, should you not have defined it explicit, will undock on his own.
I already know that, and do it. It doesn't help a bit.
That would make sense if it HAD previous orders. It doesn't, and I want ships with no other orders to stay where I PUT them.
You may very well be right. (grumble) but it's MY ship, and it's MY station, and the other ships that want to use MY dock are also MY ships. So if I want my personal battleship to take priority at the dock, the mining ship waiting to dump a bunch of rocks can wait its turn or use the next dock. There's a reason I built the station with 9 of them. Not counting the L construction bays.
(sigh) Bugs. We should make some kind of satirical song about game bugs. Hmm, you're not allowed to harm any animals making youtube videos, but do cockroaches count? Can we shoot cockroaches out of a paintball gun?

It's a checkbox at the very bottom of ship behaviour screen, as shown here:

This /\ can confirm 100% as said ALWAYS delete orders!
What he means is that, even if we DO delete previous orders, it still goes back to them.
I'm not sure why so many people keep going on with this particular piece of beginner advice. We're WAY past it.
And I did, and I got an answer.
The problem is that "fly and wait" and "dock and wait" are commands that go on forever. The ship doesn't move on to its default behavior once the destination is reached (hence the "and wait"). Because the command never ends, jumping into the pilot seat and back out again just results in the ship going back to its home position to wait some more.
