How do you sabatage anything?

Can someone point me in the right direction?

Go to a stations engineering. There will be consoles that you can use hacking items to sabotage

You need hacking items which are crafted or purchased from Black Marketeers (which are only found in mission that request delivery of illegal goods). You then head to a room on a station; which room you go to depends on which console you need, which depends on which system you want to hack. For example, to hack the turrets, head to the Security Station. To hack the storage or production, head to the Engineering Section.

The terminals are the computer stations mounted on the wall in the Engineering Section (every space station has an Engineering Section, but not necessarily a Security Station). The consoles don't highlight unless you have the appropriate hacking item in your inventory; Securiy Slicer for turrets, Security Decryption... Thingy for the ones in the Engineering Section.

Once you have the right item and you're in the right place, all you have to do is operate the appropriate panel and viola.
