I have two probes in the same red blob with different readings.
Yes but if you drop them close together in the same red blob the reading is the same, you dont need to put one down every 3 km to get maximum coverage
The probe isn't reading the result for asteroids that you see in sector. These asteroids are procedurally generated, placed in the sector when you arrive, based on the resource levels for that particular section of space in the game files. Sometimes the asteroids you see floating around do not match up as nicely as would be hoped with the resource probe reading, though.
The AI ships you own don't seem to give a ♥♥♥♥ about what probes you put down anyway. My advice is to look for refinery stations in the sector with lots of buy-offers rather than resource rich regions.
Simply look for buy-offers for raw materials. Then use scan mode and click a few different asteroids to see if mining is viable.
If theres plenty of asteroids over 80 resources inside i'd say its viable personally.
