PS. My game also started first time in my own language but after opening options menu it changed to english without possibility to change to polish again.
Ok. I got it on steam deck:
Make sure you use default linux version. If you don't force any proton it is by default, but if you add proton it will use windows version and it would not work. OK so.
1. Just go to /home/deck/.config/unity3d/Night School Studio/OXENFREE/ and edit prefs file
2. In line <pref name="text_language" type="int">17</pref> use number from above corresponding with you language. You can even force ultrawide in resolution lines.

Value to 1 . Then choose another language . After that the "text_language_h2258702997" registry appear
A língua do seu Windows precisa estar definida para a mesma lingua que você definiu para o jogo via Regedit.
If your game changes languages randomly while gaming, try matching your Windows language to the language you added via the Regedit thing.
3. Feche o aplicativo.
2. Faça o procedimento no regedit.
Isso deve resolver o problema da alteração ao pausar Oxenfree.
