Starting A Day - Eatys

I'm clearly missing something basic but I'm trying to start a day at Eatys - I'm just starting the game so I'm trying to the first available option. The menu is preset so I clicked the circle to start but the day won't start without me preparing a dish but there are no dishes available to make in the holding area and I can't seem to start making any food. But the day won't start. What am I missing?

Try prepping a side dish by opening a holding station, cycling the pages via Spacebar, and selecing a side.
