How do I start "legal" fist fights?
I'm still new to Kingdom come, and right now I'm in Rattay. I've had a fight with Kunesh before reloading after a gaff, but I was very confused by the fact that I was street fighting with this man and guards were just walking past me. Anyway, I got confused as to whether it was "legal" to knock him out simply because he was quest related and that if I go randomly punching other people they'll maybe just run away and get me jailed? or willl we be able to fight it out and all will be good even if I knock them out?

I ask because I've never really played any rpgs where it was OK to just go Mortal Kombat-ing around, and this game seems really uptight about crime, to which I consider introducing someone to battery by way of fisticuff a crime.

I noticed that you can't talk to just everyone randomly. some npcs are just non-essential generically-named walking purses to be pick pocketed. Soooo

Do I just go around punching people and I get to train my stats up and all will be right in the world? Or do I have to find a way to drive them mad and no one will talk notice since they're aggro?

In Rattay, there is an Unarmed Tournament of sorts - just find *Milan* - He wears a green pointy hat - he is the local brawler. He will want you to fight (and beat) 2 others before he will fight you. There will be quest markers and dialogue options after this for those 3 - select "Let's Fight".

This is repeatable.

You can also Train Unarmerd with Bernard, if you select "Practice Weapon" training

If you do a crime and someone see's you then yes you will get in trouble. In Rattay there is an NPC whom is a ring leader to fight him and two other guys for money. A quest related fight is ok but to just go around fighting innocent people will get you in trouble most of the time.

I have gotten a bad reputation for fighting as part of a quest as well, but I wasn’t arrested.

In Ratay, the guy walks with quest mark on him, also if you ask beggar who gives you quest to poach game he will direct you to him. There will be couple other places, but there you have to check without directions, npcs still would have quest marker.

Punching someone is a crime if your target considers it a crime - meaning there are exceptions when NPCs start fights themselves or there's some other specific reason. Dunno what you've played, pretty much every RPG I know works this way

All of the above.
If you have done the side quest " Is a friend " with Mathew and Fritze they are now at the Inn in the Glen there is an option to train with Fritze. I believe that is a fist fight.
Kill a cow and not be seen by any villagers keep punching it to develope your strengths.
Find a bandit on the side of the road like the rogue villagers that just want to steal beat them up with your fists no wepons and that's do it :)
Go see Bernard and train with him hand to hand combat also great training area.
You will need a bath and heal all your wounds at the bathhouse
