The main difference will be the modern setting. I personally hated what I played of skyrim, because it was dull as dust to me, largely due to the fantasy setting (and the fact that it was RELENTLESSLY GREY).
If you're in doubt you should watch some let's plays or clips on youtube - there are a LOT of things to do in the game, beyond just one or another of the quests. The companions are varied, the dialog options are ..... not much varied lol. But their personalities are fun anyway, and offer a very wide variety of options for getting perks and abilities when you keep them around a while.
Settlement building is something that is incredibly divisive among Fo4 players, some of us really do almost nothing but this, others cannot stand it and skip whatever they can of it. Thankfully there's only a small amount 'required' to do in the full game if you don't want to. But if you do, there's a zillion mods for additional stuff and locations.
Modded Fallout 4 is even more amazing, but vanilla with the GOTY edition is still quite playable. I put 400 hours into my first vanilla run, before even touching a single mod.
You may also need mods to help the game be stable depending on your system.
All in all, I would suggest that you are the only one who could know what you want out of the game. Do some watching of videos, just to get a basic visual or explore appraisal!
Most of us wouldn't be here with as many posts if we didn't enjoy it - bugs and all, and yes there's a ton of those too.
Thinking to using that automated tool instead. Any thoughts on that one?
You should play vanilla first all the way through so you know what your computer and you want out of the game, before diving into a buggy full-conversion mod.
So no, you should not downgrade until you know what you need from the current game.
