Report a translation problem
If the previous mod got really removed completly (and not some remains in mesh-sub-folders are left) you might have luck that the supermutants turn back normal when the cells reset. But no guarantee on that.
Changing non-scripted mods works more reliable when done while the player is in an inside zone where the world scripts are not running - the sanctuary bunker behind the house for example.
Personally I'd bite the bullet and start fresh with the Organic Mutant mod and any other mod you like and never uninstall or replace them while you play a campaign.
Your problem is 2 fold:
SMR replaced the super mutant textures for super mutants and the back of the head is missing from his textures.... Those textures either
A: Did not uninstall properly -most likely as they were packed as loose files, and are still in your system (possible depending on mod manager used, method used to uninstall, etc)
B: Baked the texture files into your savegame array, and now no longer load in the back of the head texture.
Unfortunately there is no solution hat you will like.
THE SAFEST WAY:
Remove Both Mods from your mod manager completely. Reload the one your want and start a NEW game.
UNSAFE WAY:
make sure both mods are fully removed from the mod manager, then re-install the one you want.
