How to see enemy level
Hmmm, how do you see enemy level ?

I heard that it will show up when you VATS an enemy, but I cant see anything related to level number, I saw the skull (dangerous) thing though. The star is legendary creatures

You need the awareness perk to see enemy levels in VATS. Otherwise, they will be hidden.
As a tip until you get that perk, if there's a skull by an enemy, it means they are a higher level than you, and you should excercise caution when fighting them.

Even if there is no skull, there can be wild differences in Humans.

"Gunner" humans for example, a shirtless man will tank more shotgun blasts to the eyeballs than a "Raider" wearing metal armor.

Kinda funny how even armored super mutants die more easily than those guys. Granted, the biggest danger so far for me with supermutans is "Oh no, that one has a missile launcher" which... Isn't a threat based on their enemy type.

ok thanks, and when will you find enough ammo for your minigun? I did a bunch of sidequests and Im at level 17, still didn't reach diamond city, no 5mm round anywhere in shops or drops

24 missles and 3 nukes though, its really weird me out as a heavy weapons dude

Yep,in addition awareness lets you see their resistance values so you can pop into vats from a distance before they notice to see what they are resistant to and pop back out to make changes to your selected weapon.

Uhm gunner is really weak to energy weapons though, I sneak and 1 shot every gunner on the bridge with the legendary four crank musketeer, to me, super mutant is scary as hell, too much health for the 19 damage auto rifle pipe guns to take down, Im at 17 though

Why do people keep bringing up legdary and/or upgraded gear when talking about "LOL actually it's easy!"

four cranks from a normal generic laser musket (default for them is 2 crank) is about 120 energy damage. Yes, of course that is going to be stronger than a .38 pipe gun. A four crank laser musket, even when not legendary, is one of the strongest single shot attacks in the game that isn't a nuke or missile.

I actually used my own laser musket (2 crank at the time) on the gunners, because my upgraded to 67 damage a barrel shotgun was just tickling their eyeballs point blank. They still tanked those shots too.

Now, a Raider? Raider just dies outright from something like that, even if they are wearing armor. But a shirtless man with the word "gunner" over their head apparently has laser resistant nipples and bulletproof eyeballs by comparison (was lv 10 at the time, when I ran into gunners, in Vault 75).

I do try to sneak snipe people with my .308 hunting rifle, sure. but my bullets seem buggy with those. I can nail people in the head from super far away with my 10mm, but if I hold my breath and have someone's head dead in my sights with a sniper rifle from 20 feet away, it either does nothing at all, or pings them for a small amount of health.

And that's with a few ranks in rifleman talent. Why the heck is my 10mm out sniping my literal sniper rifle?

Using a proper scope with the sniper rifle? Had the same problem, since the crosshairs seem to be a bit off.

Doesn't happen as much now, since I put a stabliser mod on both arms.

hm dude, whats your level, and how much damage does your guns do ? my legendary double shotgun have ~90 damage per shot, you can't play this game on survival with no upgrades at all to your guns or at least equal to your enemies level wise, seriously I tried the sniper rifle, hunting rifle/ combat rifle, they are all really bad without the critical hit/ sneak attack perk on survival difficulty, you barely made a scratch on those big bad super mutant, no idea if the later sniper weapons (if they even exist) are better though, I didn't get far.

It's an rpg at its core after all, higher level enemy had a lot more health, just like skyrim and the previous fallout, maybe Im just used to being beat up by skyrim legendary mobs or mauled to death by deathclaw

You need the Awareness Perk in Perception.
