Well, this is stupid, but...
Found a workaround, if you have your companion with you.
Command your companion to inspect the cooler. Basically, click on your companion and then, while in "command" mode, click on the cooler. Afterwards, trade with them. They will have the Lemonade in their inventory.
Once the Lemonade is in your inventory, the optional caravan quest will complete.
Dude! Thanks for that workaround. I had been trying to figure out how to get past this glitched quest. It was fine on my first playthough on the PS4, but playing on the PC, I got stuck on this part of the quest since I couldn't open the cooler next to the caravan corpses.
I commanded to Dogmeat pick up the contents of the cooler. He just dropped the stuff on the ground for me. First the Brahmin meat, then I had him inspect the cooler a second time and he dropped the lemonade from his mouth. I picked it up off the ground and the caravan quest step completed. Nice!
BTW, I also tried commanding Dogmeat to pick up the other lemonade can, the one already out on the road, but after he picked it up, I couldn't find it. He didn't drop it, nor was in his inventory. Minor issue, as I already had the lemonade from the cooler, which triggered the quest step completion.
Anyway, kudos to you for figuring that out.
