I'd say just....be careful how you assign them as best as possible.
Frankly, even w/ the bell I find that managing settlement jobs is taxing at best. I think its hilarious that when you look at a settler in WS mode it highlights in green whatever they are working on - this would be a good solution if you had no buildings and sightlines to everything from everywhere. As is...its a pain.
Great mod would be settler job management tool.

EDIT: If you sleep, there will usually be a lot of provisioners moving through the settlement, so you can catch them then.

In any case - you cancel a supply line the same way you start one. Find the Settler who is running that line and reassign him to something else.
Free look mode when in Workshop would solve a lot of those problems..
Y'see what you have done there is reassign them to another settlement. When people say 'reassign' to get rid of a job they just mean put them on another job. Not actually use the 'reassign' option which sends them to another settlement.
Useful thread anyway, confirming that the only way to change supply routes is to manually switch the jobs of each provisioner. And the tip about sleeping to spawn provisioners is a good one.
hey bud i figured it out, you guys are over thinking it. all you have to do is kill the settler that is the supply runner. i don't even get attacked by other villagers. the supply run canceled and i am now free to set up a new one where i need it to go. EDIT thought i would point it out i am playing on console. my computer can't run it but i saw your problem and wanted to help. peace out.
