Is there a way to see/determine what settlers are unassigned?
Or even to see who is assigned to what would be nice as well.

Best way I have found is to keep the stuff with assignments close together and stick a community bell nearby. Ring the bell to get everyone to that location, enter build mode, and then look at each person. If any assigment they are inked to is also in view it highlights the person & the building/plant/bed/etc.

Not very intuitive but works.

I'd heard a suggestion elsewhere that you could equip each person with something like a helmet when you assign them. Anyone left is unassigned. Obviously it doesn't tell you WHAT they're assigned to (unless you do a specific item equip for each assignment type) but it's better than nothing

Since new settlers arrive with improvised guns, I just give them better guns as soon as I know what to do with them. So when I see a settler has still his old gun, I know he just arrived.

I think it would be nice if Bethesda would add something into the workshop UI that would tell us what task the highlighted settler is assigned, if any. I mean we could wait for the mod tools to come out, but until then it seems like something useful they overlooked.

Or RENAME them, like: Gardener Bob, Security Sarah, that sort of thing...

I put different clothing and hats on the different types of workers. Not perfect, but it makes it a lot easier. Then you just have to find the wonderers and reassign them or move them as fit.

Also, I believe that each farmer can work 6 food (or maybe 6 plants because I haven't tested it completely).

It is 6 food. (meaning 12 tato plants for example)

I have tried putting articles of clothing in settler's inventories, but they don't seem to wear them, head gear works, but I can't seem to change the uniform..any tips on doing this?

There is a bad method in the game. In build mode, when you look at an npc, it will also highlight whatever they're assigned to. But since you're in first person view, it's almost impossible that you'll have a viewing angle on the npc and the object you think they're assigned to.

You're not thick. Bethesda just made the worst UI in the most rushed game in their history.
