How to dismantle random items?

Note I know you go to a bench to dismantle stuff. But I have a TON of items that are not showing up on the benches. For instance I get only a few clothes options on the armor bench.

And what about junk items? I have several random items like a lighter, Handcuffs, Toaster etc etc. They show in the description what items they have.. But I have yet to find somewhere to dismantle these junk items

Just put them in a workbench. They will dismantle automatically if you need the materials. I don't know how it works with armor though, but you can dismantle weapons at the weapons bench.

also you can drop them on the floor and then scrap them in workshop mode.

When you look at a workbench (red one) and press R, you can then press T to dump all junk items in the workbench. These will then be broken down as and when you need them, automatically.

You can manually break them down by dropping junk items on the floor and using workbench to manually scrap them, but that is tedious.
