If you put stock on pistol -> rifle?

So I'm making a rifle buff build. If I put a stock on the revolver, does that make it count as a rifle? What counts as rifles - just the ones that are rifles from default?

The stock defines it, yes, if you change the stock from a pistol grip, to a rifle stock, it becomes a rifle, regardless of barrel length/type.

Yes. Changing from grip to stock will change the weapon into a rifle.
