Are they solely linked to quest or can companions like you through actions hacking/ fighting a faction and etc.

depends on the companion, they all like different stuff. Some like when you go in power armor, some like hacking, some like XYZ etc

It varies from companion to companion, but all have actions that will cause them to gain or lose rep. Strong hates it when you enter Power Armor or do basically anything but eat corpses and act like a psychopath, for example.

Apparently they're watching even when they're not with you.I'm travelling with Codsworth and I did something (can't remember what) and I got a message that Piper didn't like it.

where did you do said action? I've seen them respond to stuff if they're in the same area even when not following you.

Them liking you through repeatable actions like crafting and lock picking is a quick and simple way to level up companions but theres a timeframe between each action where the companion will like it. For example, if you pick a lock and Piper likes it then you move on to another lock right afterwards, she won't take note of it for another 5 mins or so.
