That's not true. If you keep her out of melee range, she'll gladly pelt away with magical companion ammo, like every other companion.
Once she pulls out a melee weapon though, she'll not put it away unless she has to. Sigh.
Like I said, she behaves differently for me. I equipped a laser rifle on her, and she shoots it until she runs out of ammo. Then she switches to another weapon that does have ammo, and shoots it (Her backup for me is a shotgun). Works like I expect it to.
Piper however has unlimited ammo for me - Unfortunately it's 10mm.
This should have her resume using unlimited (self-supplied) ammo. Note however that if you also have her equipped with, but not tagged to specifically use a nice melee wep (Gronak's Axe for example), she may not switch to that when and if its appropriate. May want to keep an eye on that... her original settings should have her switching from laser to melee based on distance to mob(s)
To check whether you need to employ the cheatcode(s) for reinstalling/re-equipping her original rifle, try removing ALL visible weps from her inventory, then see what she does when you approach a badguy location. She SHOULD normally pull her original rifle out of its invisible pouch and blaze away. If not, you'll need to employ the cheat in order to get her back to original condition.
P.P.S. Even with no melee wep at all, she's a blackbelt kungfu momma and will cheerfully rip the lungs out of most no-name enemies she can reach...delicately, of course. heheheheh...
She is special.
She likes to punch people, WITH A POWER FIST...
And She picks up weapons for you so you don't have to carry all that junk yourself.
Just don't forget to talk to her and make room in her equipment.
(Wonder if giving filling up her inventory prevents her from picking up more stuff, but I highly doubt it)
Bottom line: she WILL (usually) distance shoot rather than be strictly melee IF (a) mobs are at a distance and (b) she has ammo for her firearm...which is never a prob as long as she still has her original rifle and you have not "tagged" some other weapon within her inventory.
She definatelyhas a thing for Grog's Axe though...after doing the thing in Hubris Comix, I went to grab the Axe from its display case and it was missing!!....until i realized she had grabbed it earlier and coyly tucked it away in...er...uh...
P.S. now going to see if i can persuade her to wear the maxxed out Silver Shroud outfit. That along with ballistic weave hat should leave her protected while lightening her load...making her a mo bettah pack mule-ess....
