No, the stages are just actual numbers. 25, 50, 100, 200, up to whatever, like 5000 for a fail state on some, etc.
Entering anything other than what you're shown is going to result in it either not working, or doing some very bad garbage.

When did you piss him off? What SPECIFICALLY triggered his anger? Because you can lose him entirely as an ally if you join the Raiders in nuka world. Or, if you manage to murder someone important in front of him, or a variety of other things.
If you haven't done anything weird or longer-term like nuka gangs, you will need to revert to a save before you noticed him being aggressive. Just like with other comments, that is almost always the BEST solution, even if it's not the most satisfying, if you're going to lose "lots of hours".
