Well if you want to keep a high happiness you would need all 4 stores that increase happiness being manned at the same time.

You can rotate one settler for every store but it needs some time for the settler to get the inventory. Which means you need some travel, sleep, waiting time between shopping. So it is better to assign one settler for each store. There is also the problem, that they sometimes don't stand at the store and walk around during shop time.

If you assign a settler to a store it will generate caps for you. Depending on the amount of settlers it goes up. The better stores generate more caps then the lower ones. It sells to other settlers too and has an effect on happiness. You can see for each store what it does for the settlement. It is part of the description in the building mode and shows when selected.

And then there's the bug I got where the trader will open the shop interface, but there's no inventory in either screen (I just submitted it to tech support). I don't know if it applies to all the stands, though. It's highly likely, though. It's best to have one person for each, as it takes some time for them to switch stands, and who knows if it would cause a glitch to keep switching them. Besides, you'll have 20+ people per settlement, and you only need so much food, so you can spare them. :)

The more stores you have manned the more caps are generated and placed in your workshop based on the number of unassigned settlers you have in your settlement. I go into detail about this and many more settlement related things in my guide here. Please give me some feedback, I really appreciate it!
