As of right now, we're being led to believe that your character is the Sole Survivor. That being said, it seems likely that the baby is, in fact, alive, and - for some unknown reasons - left the vault before you.
Because, like you, said, there'd be little point to changing how the baby looks (aside from skin color) unless the baby played a bigger role.
i hope we meet our baby boy/girl later in the world. Maybe he/she is a boss or maybe a random stranger. Would be cool if we could see them all grown up.

Dude, that would take 30-60 minutes to do, programming-wise. The baby is like a few months old, you mostly have to worry about skin color.
Yes and here in Vault 101 you were born and here you will die, for in Vault 101 noone ever enters and noone ever leaves ;) Because everything in a Fallout game is upfront and truthful.
