if you can get settlements to around 80 - 85% happyness during play you are fine
You get food sent in from other settlements through the supply lines.
My stats:
I had a similar set-up at Croup Manor, except I had around 70 defense, 4 beds (one for each person plus an extra one), and... a mixture of paintings and lawn flamingos. Also used mutfruit specifically for the food.
The "Size" (aka a "Large Size") settlement is based solely on how much crap you have there, not how many people you have.
Also I think it helps to clear out all junk items that glow orange when in build mode.
It's imperative to NOT have an outbound trader. You can send a trader from another outpost to make sure you have plenty of supplies, but do NOT send someone out from whatever settlement you're using.
