But I haven't heard anyone mention 4 and 76 as the "best" series spin-offs
Fallout New Vegas of the new fps ones.

Fallout 3 it's hard to say, behind both of those games but it's still fun. Fallout 76 is something else and I wouldn't recommend it unless you are looking for an "mmo" feeling game, I had fun with it but it's got a lot of differences to the rest of the games of course. Fallout 1 + 2 speaks for themselves, great games, but of course very dated and entirely different in gameplay and such.
Ultimately I mod the ♥♥♥♥ out of the games to suit my own tastes and I am currently playing Fallout 4 again, any of these games could possibly be your favourite, especially with the plethora of mods available.
