Brahmin give a food production bonus in terms of bonus food items, based on what you are growing.
If you have them in a settlement with no food production you get completely random aid items.

You only need 1 brahmin per settlement for the food production, because the bonus is a yes/no thing.
After the first the only thing that changes is fertilizer production.
A brahmin trough should keep non-caravan brahmin somewhat tethered to a spot. Be warned if you try to put more than 3-4 brahmin on a trough they start landing on each other during spawning and getting throw into the air and falling to their death.
You can scrap institute weapons for plastic by killing synths then craft jet at a chemistry station for loads of caps.
