I haven't been able to find a decent solution yet. Honestly I will be giving a negative review of this dlc simply because of that.
Not because its small, Not because it did things mods did before it, But because for such a simple DLC they couldn't even get that right.
Why cant we have a bell to start the fight, what the ♥♥♥♥ kind of gong show arena am i supposed to build when all creatures are instantly hostile to others and settlers jump the gun and start shooting as soon as they are assigned. So fine i made little starting rooms probably much like yourself and now they just get stuck in the doors. Like ffs bethesda, complete idiots.
Yeah that is irritating. Hopefully there will be a mod to fix it soon.
I just found a good way to make the fight start when you want without settlers getting stuck on doors!
First make a box for your settler/settlers then put a standard concrete doorway (probably any doorway would work but that is what I used) and put a completely solid door on it (I used the bunker door which I think is a part of the homemaker mod but I assume any solid door would work) and in your arena place a siren and have it turned on connected to a switch, when you want the fight to begin you simply flip the switch to start the siren and then the fighters will open their doors, see each other, and start fighting.
I also use scavenger benches in the holding cells, that way I can assign settlers or bots to the cell without worrying about them fighting each other. Then when they are inside, I can assign them to the arena team markers. They walk through the doors to get inside, no problem.
How are you snapping the doors? Maybe that has something to do with it? here are some screenshots of my fight pens that have worked for several bot vs. bot battles:

UPDATE: In the very next fight I saw the issue happen. Tried the trick of attaching a regular door to the outside of the concrete door and that did seem to work.
