What do I do with all my caps?
Currently I have 30K worth of caps. If I sold all my excess weapons and apparel I'd probably have more like 100K.
I think I have the best weapons and apparel in the game, more than enough ammo and chems. So is there a merchant somewhere selling an insanely
expensive item that I can spend my caps on? If not then I will stop wasting time picking up stuff and selling stuff.

Have you built stores at your settlements? Top tier Bars make for happy settlers and building them eats up alot of caps.

The weapons merchants (eg in Diamond City, Proctor Teagan on the Prydwen - probably others) - sell legendary gear, but quite honestly it's never as good as what I already have and way overpriced.
I'd spend it on power armor frames if you're into doing up power armor. Or if you're into settlement building, you need quite a lot of caps to build level 3 stores.

(sorry ironhead, we posted at the same time and said more or less what I said. lol)

Buy the house in Diamond City and then buy supply drops from vendors for certain supplies that you need to decorate it thoroughly.

EDIT: Vendors sell some pretty good legendary items too, while they may not be as good, they'd be pretty good armor for companions.

Shame there's no gambling in 4, that was always a fun way to get rid of caps in New Vegas.

Always seems to happen in these games, you end up with more cash/weapons/armour than you could possibly need. Or sell. Yea, generally it gets to the point where you stop looting dead bodies entirely (Legendaries notwithstanding for this game, ofc).

Really, if you could rally the entire settlements population to one point, hand out all the armour/weapons/power armour/rations, you'd have one hell of an army.

1. wait for the geck to release and someone to make a mod that introduces gambling
2. spend all your caps trying to win that all expenses paid vacation to hawaii
3. sob quietly in a corner when can no longer even afford a piece of radroach meat

I agree. That's been my experience with Fallout 3, NV and now Fallout 4. Not complaining though ;)

BTW this:

is my idea for making my own "end game". Once I have all settelments to max population and have equipped/armed each and every one of them with top tier gear I'll call it a day and claim I saved the Commonwealth XD
Considering the available allies, it'd be a fair assumption that between you you'd rule the Commonwealth.

Buy up all the Legendary weapons in the shops because they'll look nice on a settlement display mod. ^^

Shoot holes in the caps with the vast amounts of ammo you have.

I feel like survival mode has the balance the game was made for.
It costs 55 caps -at least- for every visit to a doctor: I have to visit one after almost every foray. I'm currently at level 13, and I forsee having to spend alot on chems and stims while prepping for the longer saveless campaign missions

Never been to a doctor. Have about 100 stimpaks which do the job.

Wait for a Gun Runner's Arsenal type DLC or Mod which was made for NV for precisely this reason.

What actually happens when you throw that amount of caps in a bathtub?
Can you bath in 1000's of caps?
