I created a metal box next to Longfellow's workbench and whenever I needed to ensure something's untouched, console 'lock 50' on it. Of course, that only works on PC/non-survival.
I haven't tried, but I don't think NPCs/settlers/mobs are willing to jump to get into an area... a little shack on a tall foundation block might keep things safe. Maybe. Best test would be to put one next to a travelled path and throw some weapons with matching ammo in a box within. After the next radiant defense or generic attack, see if weapons are missing, because settlers will grab anything out of a box if it's better than what they have, during an attack... but it *must* have accompanying ammo.
Also heard/untested is that settlers avoid trapdoors like the plague.
This is correct, but in the past you had to be careful or you'd find an important item was scrapped for parts automatically. I think 1.5 fixed that, and introduced some issues of it's own where an unscrappable item was present and the build system would tell you there's not enough resources because it wants to scrap that item first. Not sure what's declared internally unscrappable, but quest items and legendary armor/guns are a safe bet.
??? armor and guns don't get automatically scrapped for parts when building, you need to select the "scrap" option at the respective tables.
Scrapping quest items on the other hand, possible, but you can't store them in a workshop until they are no longer needed. Though if it was scapping them straight from your inventory then the issue is with the build system, not where you store the item.
The "wild" workstations do not reset like normal containers do.
