I feel for you, but I won't kill you, sorry.
I did this myself but I only lost 20 hours and had made some bad build choices, so I was happy to start again.
And if you've already quit out of Fallout 4, there's no workaround at all, as far as I know. :(
I know this doesn't help right now, but:
ALWAYS back your saves up when you get to points of no return. I just do it in Windows (from Docs/Games/Fallout4), and it's annoying because of the way the files are named. And without going into detail, forcing Steam to accept your older game files can be a chore, too.
I assume there's a Fallout 4 Mod Manager out there - The one for New Vegas wasn't just a mod manager, it also managed saves. So that's your best bet, see if there's a Fallout 4 Mod Manager, probably from "The Nexus" website.
Frankly, I'm not going to research and link it because I don't need it myself. I'm sure you understand. :)

But...Fallout 4 is Steam Cloud enabled. If you activated it, and synched your saves at least once, the save file should be there, and can be reacquired if you resynch.
I deleted the saves ingame. Unfortunatly steam cloud synched that. It's all gone.
Oh :(.
Go to My Computer and click on the drive that the 'My Documents' folder is located on, so most likely the C: drive. From there click on Properties and then click on Previous Versions.
From here, if you have the feature enabled (can't remember the name of it but it should be enabled by default on your C: drive, from what I've noticed atleast) you should see 1 or more previous versions of that drive, double click on one of them that was made before you deleted your save games and it should open it in a new window.
Now you need to find your My Documents folder, so go to "C:\Users\YOURNAME\My Documents" and after that find the Fallout 4 folder (\My Games\Fallout4). If it worked, you should now see your old save games if you open the 'Saves' folder, and from here you can just copy them over to your 'real' Fallout 4 Saves folder and boom, you'll have your save games back! Maybe not the latest ones but atleast you won't have to start from the beginning :P
But keep in mind, I'm not 100% sure if it works or not, I just thought I'd post it in case it would work

It's empty. Now what?
If you deleted it in-game, then it did a normal deletion and It's not sent to your recycle bin, in which case, you'll have to use some recovery software such as:
https://www.piriform.com/recuva
If you deleted it manually, the same method can be used to recover your saves, unless It was a DoD deletion
If you use Steam's cloud, it will reload all your recent saved games onto your computer.
