They will find their own pack animal, and as far as I know can't die anywhere, even when attacked on route.
I have 47 trade routes across the map, quite often I see 2 or 3 of my provisioners out in the wilds.
they normaly cant die thats correct (as long u dont kill them uself by mistake) , BUT as long the fight or out of action (sitting at the earth when taken to much dmg) the trade route is disabled till they are out of fight/ up from earth again. that means u can have this moments where u just want to build something in a settlemetn and the resources are missing because the trade route is temporary out of action.
To minimize that its a good plan to equip this supply settlers with a good weapon and armor (for that i ever hoard combat armor, army outfits and laser rifles, for the more dangerous routes inside the urban territory i give them plasma weapons and plasma grenades) .
In survival mode that gives the benefit for u that u have some more save reliably routes u can use too.
