If you install "looksmenu" mod you can open the console, click on her and tipe slm command.
I think there are more mods that allow you to do that, as AFT

i get the same problem here, as soon as i change the hair, the whole face changes...
Are clicking on Cait and using the slm command? I doubt other commands works to.
Have you got any mod that edit Cait? If other esp is editing her it will probably conflict with the looksmenu editing
Odds are he has a mod installed that already edits that character.
I have a 2 mods for new companions (Heather & Vex) else i only got the "Tea Party Companion" mod which allows me to hire more than 1 follower.
I have no mods that change the appearance of vanilla followers.
I've got all my settlers using vault 111 suits for a uniform for example.
Also the face issue is because you moved to fast and clicked something by accident via lag, most likely.
