In general, the Fallout designers really love objects that are just a bit too tall to fit into normal rooms...
For each type of store there are three tiers, each with two models. The models make no practical difference. The higher tiers cost more to build but have more caps for you to obtain by selling to them.
Adding multiple stores of the same type has no effect (iirc) as the items for sale and the caps supply are pooled across all stores of that type. (In fact I think they are pooled across all stores of that type, across all your settlements?)
Some can also improve settlement moral if manned by a settler.
You build a store
You assign a Settler to the store in the Build menu (Assign)
You can then buy items of that type (general, weapons, armour, clothing, chems/medical, food/drink) from the store.
You can sell anything to the store, up to its limit of caps.
Items and caps refresh periodically - every 3 game days iirc.
Low tier stores are called "store", the high tier ones are called "emporium".
There are special NPCs that will increase a tier 3 store to a tier 4 store if they are assigned to it.
"Trader" means a general store that will have mixed inventory similar to Carla, Trudy or Daisy.

So I placed some tables and chairs it was the pub I guess.
At night as well so had to add lights too. Its getting fun now for sure.

Do I need to add clothes to the clothes store or do they grab stuff they need from workshop?
They do all the same things as the wooden version, they just provide you with a different appearance to use (and the glass-fronted ones can snap together to make a single long counter, if that's what you want).
Once you build the shop, you don't need to supply any further goods or materials.
The game doesn't show it happening, but it's assumed they trade for goods or raw materials as part of their business.
You can actually sell all your unneeded stuff to a vendor beyond their cap limit. The game will warn you the vendor does not have enough caps and then you can approve. Just in case you want to keep clutter down.
Advanced:
Stores are good to have in a settlement even if you don't plan to build it up. I usually put weapons, medic, and general stores. At the very least one settler can be assigned to which one you need at the time. In other *edit: words assign a settler to weapons, buy what you need, reassign the same settler to medic, get what you need, ....then assign to food production while you need nothing.
There are two types of settlements. Those where the happiness drops so low you lose alignment with them and those you can never lose alignment with no matter how low the happiness goes. If you load a settlement up with stores and assign vendors to them those stores will be available to trade with even if you are no longer aligned with them.
If you have the cheap store like say the weapons store and a raid breaks the store causing it to need repairs you can still trade with the vendor without repairing the store. The vendor will be out walking or standing around somewhere. The cheap stores break so much I rarely repair them.
If a settlement has reached max population of settlers but you still need another for that emporium you just built. Go to another settlement and assign a settler to supply line where the destination is the emporium settlement. When the provisioner reaches the destination settlement reassign the provisioner to the emporium.
I cant send anymore toSanctuary so am sending a few to other settlements as they ere idle and I have no more slots for work food is great.
I'm at level 27 late bloomer had no idea of this part too busy doing quests and just having fun.
Now I'm spending time on building stores learning how to fix houses .
I dont want to use any mods as I'm not comfortable with them Nexas is great but the mods for the game inbuilt require my email. Nah not prpared to give it.

So many YTB and sites have guides dated 2015 so i went into this game wearing black glasses like a blind peron I had no idea :)
My plan now after the advise and knoweledge I have gained here is to just follow the supply line to each settlement and check them since many need more beds and now add the stores.
I'm loving this game.
All my settlements happiness is between 65 and 83.

There's the weight bench (+1 STR),power cycle 1000 (+1 END), barber chair (+1 CHR), Vault 88 overseer's desk (+1 INT), pommel horse (+1 AGI), and slot machine (+1 LCK). Most of them can be built anywhere, but the overseer's desk can only be built inside Vault 88.
