Just ran across this post. Over a year old, but just wanted to say sorry about that happening in your relationship. That kind of thing can be a torment while your going through it. You got through it all okay, I hope?
This was already discussed that only changes the apperance not the voice used by the player or the pronouns chosen in dialogue as the conditions only look at the base forms gender to pick what ones to use. So to put it simply the player would look like a woman but sound like a male and be refered to as one.
I did find this though its excerpts from the script used at the mirror where we first choose things.
There is similar code to change back while at the mirror and MQ101 is running. So basically if someone actually did want to make a swap mod the details needed will be found in MQ101 and its quest script. It is actually a lot more complicated than just a single command if you want to do it properly where it actually changes things in the game to match.
Edit one important note if you do not use a command like player.removeallitems NewPlayer before the swap anything you have will go missing. This is in fact why so many mods that add stuff to the player but do not monitor to make sure that MQ101 is done first have the items lost because they were not stored in the player that was chosen or the active player container that we can access after we get the pipboy.

seriously though why is it only TES has decent race mods?
In the creation engine they changed how the Race form works. Used to we could just edit a race and go however now they have locked the bodyparts etc. to the race form if the body part does not say it is for that race you have an invisible character.
I actually had to duplicate the eyebot race form and all the parts for the eyebot that was locked to it so I could change the race they worked with just to enable the ability for the player to talk to it for a mod I made, before the creation kit (skyrim, F4) all I had to do was check a flag on the NPC form to enable the ability for the PC to have dialogue with it now its an option in the race form requiring extra work and more duplicated but changed name forms just to change one thing not related to the look of the race.
