If your have armorsmith extended ( https://www.nexusmods.com/fallout4/mods/2228 - heavy weight and lots of compatibility issues) or crafting framework ( https://www.nexusmods.com/fallout4/mods/40650 - light weight but less features) installed you can just craft the items yourself on the mods workbenches in whatever settlement you are in. Collecting all that stuff was already boring the first time.
You could also install the better settlers mod ( https://www.nexusmods.com/fallout4/mods/4772 ) and you will get much more variety in settler outfits out of the box and can simply give different hats to different types of occupations, so you know which settler is supposed to do what exactly.
if you want to do that just store the armor pieces in a box on the settlement you want to use it. I normally just equip provisioners and guards. But recently ive been thinking about replacing provisioners with a robot design i made that looks amazing for that task.
