Not much variety around for standard game. There are few mods in Nexus that provide some amounts though. Creative Clutter has quite a lot of options included for that, among other things. It is one of my main go-to mods for settlements. Take a look, if it is what you want, or too much.

If you want a lot of visual variety, then check out Sim Settlements and it's addons for it. They have plenty of crops and large variety of plots. You can build interior plots, exterior plots, creative forms of same crop plots etc.

If you google "boston rooftop garden" for images you will find a lot of ideas.
There are mods that add dirt plots of various sizes and dirt colors. Also planters made of wood, brick, concrete etc. If the game forces you into keeping plants well-separated, mods fix the problem. So it is possible to create realistic gardens with long, neat rows of crops. And then if you place brick paths around the plots or planters you can get something like this.

Regarding plants, I haven't found anything that looks like the real thing. So for example with carrots I just plant as many as possible close together in long rows to improve the overall look. The game does need more plants for farms but also potted varieties for indoors. There are a few mods but nothing special.
And if you use settler idles mats and extra workstation mods then you can get a fairly good picturesque look.

One thing I noted is that each settler can only do a maximum of 6 plants of whatever kind, so the fastest way to ramp up food production in the beginning is look at how much food they produce
MUTFRUIT can help a lot there, it makes ONE food per EACH, but if you look at other things they only produce 0.5 per each plant - so to get the most chow right from the start you'd do best with Mutfruit trees.
There are a few settlements and also Diamond City have Mutfruit trees that you can harvest (they respawn too) and then go plant around your settlements. Often they are found in the wild. They also grow pretty close together and can hide turrets and other things if you put a grove in a strategic location
Look also at what is needed in order to make food and chem items. Adhesive calls for Mutfruit, Corn, and Tato plants I think - check it in game and set up an area that focuses on that so that you have a ready supply. I forget what its called just now, but that "STUFF" is five adhesives each when you make them at a cook stand - it's the last menu item at the bottom
A number of Tato plants can be grabbed to plant right away at Abernathy Farm - right over the hill behind Red Rocket Truck Stop, just past the water tower
Carrots were another item used to craft something important, and I found a bunch of them at the "Slog" which is quite a ways east of Concord
After three days and several scrape and reloads I threw in the towel and declared "FUBAR" on that
My reccomend? Play around with it and explore for a long time before going the survival or very hard difficulty route.
It's nice to know where the goodies are, but even better to know where the bad guys are!
In fact - I'm heading for the game now (retirement is a beautiful thing)
