Nuka Cola Quantum's flavor profile is based on the soda "Bawls" which also has a characteristic blue (but it doesn't glow) Look and double as an energy drink. So intense in fact, it has cardiac warnings. The drink is quite good, but anyone not looking to pull an all-nighter should limit it to half a bottle at around midday.
Bawls is also extremely expensive, with a 12 pack of 10oz bottles costing almost $40.
For the other Nuka Cola flavours, it's worth noting that (as described in Fallout 4) Bradberton also acquired and adapted existing drinks to match with his own product. The terminal in his office says that Nuka-Cherry was originally "Merle's Very Cherry Soda" and Nuka-Grape was "Grape-Pearl Soda". So you can probably include whatever other real-world drink seems appropriate as a guide.
And let's not forget Yellow Nuka-Cola (from Fallout: Tactics), which presumably tastes like something like ammonia.
