But take a look at Sim Settlements they have a direct sharing (its a optinal uhh well dlc you coud call it) as far i know - i personaly dont need the collecting thing, i dont mind go from time to time to the citys and get the Scrap out to transport it to my recycle factory. it fixes anyway a lot of problems with settlements even if you dont need the cells/Citys thingy, just look for the "light" version.
If you find something like that to the last one tell me :P Thru Sim Settlements and RISE i started to get used to donate unused weapons and armors to the Citys, but mods/ammo i usualy just sell for scrap and pack that then in to my recycle factory :D
Ps. as far i remember this guy made a mod to make containers flagged so your settlers come and pick up the stuff themselfs - last patch he implemented said system too :)
You should use caution trying to do to much it could cause things to fall off the conveyor and result in a game breakingly large amount of stuff on the ground.
As for a recycler of ammo weapons etc. this may be what you are looking for I have never tried it myself.

a couple of tricks tho you can use dog kennels on either side of the conveyor belts to keep stuff on there, its a perfect slope at the right height and theres a mod on nexus that lets you move the workbench so you can set it up anywhere without being forced to path to the original location

For starters, the object extractors cant really pull some items.
Then item a will be searched for and pulled from all connected workshops, then b, c, d etc
Then it will run into another snag, they will stop pulling say beyond item h
Ways around the issues is to exclude any/all items they dont pull so well.
Then split the items they will pull between multiple extractors.
I've ran up to 24 extractors/recyclers with items to pull split evenly among them.
Worked exceptionally well and is pretty quick about it too.
I have a list of items to exclude.
catch is, it's on paper & atm I've no idea where it is or the time to look right now..
Few that I do remember off the top of my head though.
Brooms, Shovels, Fishing rods, most lamps, Jangles the moon monkey, umbrella's, plungers, bowling pins or balls (balls of any type need a downward slope directly after the extractor)
buckets, giddyup buttercup parts, several (but not all) vase's
Silver bars (junk item not scrap) they roll on the belt.
This can be fixed by swaping the silver bar model with the steel or aluminum bar models
I did a 16 story factory with 24 extractors/recyclers on the top floor that drop into 6 bins.
Just to see if I could make it all work & it does rather well.
Intend on recreating this at starlight one of these days but with less floors & bigger footprint.
Been taking a break from FO4 though..
I can assure you that mod works,
just takes some additional mods with some trial & error thrown in to make it all come together.

3 vaccum hoppers left side suck out the Green Chest you can barley see and bring it to tow sorters - one sorts out materials and stuff i want/need for crafting the secound one Tools for the Guy in Vault 81 then a Storage - that 3 vaccum hoppers suck out again to 3 Recyclers.
i just gone and ripped out the roof to show you that one, its working damn fast and i have rarley issues with it
Completly agree pretty much anything bulky or that gets at akward angles like the items you mentioned will have issues anything from getting stuck exiting to getting stuck entering into whatever machine or storage at the other end of the conveyor. And once one item getting stuck blocks the path the whole thing becomes a mess.
When you set it to current workshop that means it only looks at the inventory of the settlment it is constructed at so when you took the stuff from the workshop there was nothing left for it to pull.
First install a terminal, and connect it to the power grid.
Look in the terminal, if the object extractor pulls things from linked workshops. DEACTIVATE it. After that, let him pull 2 objects at once. If you pull more, some things get stuck. You can use the linked workshops for pulling only a few specific items, but not for large "lists".
Sometimes it helps, if you remove the objects he tries to pull. And sometime one of the objects can't be pulled at all. you have to experiment with that.
But normally this delay is caused by linked workshops and too large object lists.
And DON'T ever go to sleep, or leave the area, if the factory is still working. It bugs out for sure! If that happens, scrap all factory parts, and install them again. There is no way around this.
For your second wish, their is a mod on the nexus called ammunition workbench. With that you are able to break down ammunition for the factory chains. Or you can make the ammunition complete manually. I use a combination of both, breaking down the ammu, and manufactoring it afterward over time in a factory.
... and if you are on it, try to get a mod called "Soylent Green". With that you are able to make raiders and gunners usefull, transfering their bones into fertilizer, that you need for your ammo factory chain. :) And I guarantee, you feel real evil after doing that ....It can even solve the food problem of your settlements .... But doing that, you will feel evil and dirty ....
I'm surprised no one has told you about this mod here: https://www.nexusmods.com/fallout4/mods/26375. It has everything you are looking for and more wth Ammo, Armor, Weapon, and Mod scrapping machines. The output is actually balanced towards the vanilla game and doesn't give you "random" scrap.
