Can you be more elaborate? I have only an ammo machine, so I just throw things in there that contain the desired parts? Is there no way to just scrap anything and then sort the end material without that mod?
It's super tedious, I definitely recommend getting a mod that does it for you, there are quite a few.
Best bet would be to get Manufacturing Expanded.
With that (if you plan on staying in the settlement longer) you can toggle linking other workshops to get scrap, food, water, etc.
The object extractor will pull out any object or item you configure it for.
Since salvaging stops once scrap reaches certain quantity, it's beneficial to have it set to pull them from other settlements, for continued supply.
Or run around and pick up stuff manually, with less stuff in the workshop, less prominent they are to get attacked.
A good solution for a settlement hub that's well defended, can store and produce a variety of things. Plus, if you get any mod or CC content that add settlement mob attacks, you can really cash in on that loot and process dead enemies into protein rich food paste.

If you plan your production/processing line, you can place scrapping machine near your entry and run conveyors to the building where the rest of it will be sorted or reused.
And you can focus on other stuff you wanted to do.
Keep in mind that you have to be present for this to work, if you leave the area everything is paused.
If you store a ton of junk in a Forge, it will use the parts needed if they are present and likewise store parts you dont use. Some of the Factory items need copies of what to draw out of containers. Ex you can set up a sorting system and make sure all junk items that contain certain junk parts are extracted out of a container IF those parts have a copy inside the machine.
