I've been trying to fix my DEF_UI but I ended up uninstalling it. But now every time I open Fallout it shows this message and I can't seem to find any other discussions about this message.

Looks like you uninstalled it wrong? You might need to search your files for any files related to def UI and remove them. When enabling/removing mods, you really need a clean save to work from. Go back to the mod page and see if there is any special uninstall instructions. Or you could try reinstalling and uninstalling it again.

What mod manager are you using?

Check your data file ad well as your main file. I've not looked to see where all of the files went. Nmm has a tendency to not put the correct files in the correct folders.
