I would recommend for instance these two mods: Homemaker and Settlement Objects Expanded.
Now at first I was hesitating to try it out cause I actually used to get really eloborate builds going when I built mine, but honestly I dont have the time for it anymore.
Sim Settlements has complete structures that you basically just place out a bunch of zones ala Sim City style and over time the structures actually grow and develop on their own without you having to do very much at all.
Its really quite amazing all I had to do was place a bunch of "floors" on the ground and these "floors" have differrent kinds like "house", "farm", "commercial", and "industrial".
Without putting in very much effort at all I had a whole lot of actual settlements that looked very interesting and pretty much had every bit as much functionality and usefulness as if I had taken the time to build them all myself.
The system works really well and there are a lot of buildings for it cause the guys figured out how to make some decent tuts for people to add their own content to the system.
On your own you'd have to spend an enormous amount of time with a whole lot of settlement mods to make comparable looking villages for yourself. I've recently spent a crazy amount of time just adventuring around the game as a result honestly, as Im not having to spend a week of afternoons on one settlement build to get something that looks good. Basically a decent Sim Settlment might take you about 2 hours to get something passable for a village.
Although you can get real crazy with the system if you like and spend some serious time developing a spot and the system does play well with the original system as well.
