You should see Piper listed in the drop down menu under "7 - Player"
If none of this is appearing, then you have a different issue going on. The only other way I know of resetting her is to start a new game.
Lastly, you should never, EVER change an NPC's face using console commands, as you're learning first hand. If you need to change an NPC's appearance, fire up the CK and make a plugin (ESP).

You just made my day!
I installed 'Loving Piper' and only used the base *.esp. Then I created a custom Piper and transferred it to my savegame. It worked just perfect!
Phew! Finally I got rid of Piper's face and have one fitting my taste.
