Fallout 4 - Trading/barter shows a blank inventory

This is frustrating. A lot of the game bugs I can handle, but besides my weapons occasionally not working, I find this one the most frustrating because I can't find a way around it.
Sometimes when I try and barter with people, in this case Deirdre from The Slog, our inventories show up empty and I can't press anything (such as scroll through the different inventory categories).

Does anyone know how to fix this bug? It makes no sense at all, since my inventory is obviously not empty, and I'm able to trade perfectly fine with my companion.

I've only seen this happen when trying to barter outside of normal business hours.

I get the 'no weapons fire' problem every once in awhile. Sometimes hitting Esc works, other times you have exit and restart.

Thanks @ralphtobybob , it might be because I was in a quest with her, but even then I couldn't barter once we were back at The Slog. It's strange. Restarting the game didn't change anything either.
And yes @Tavman, I have a Bethesda mod to cut down on unnecessary frills in the game, because playing without this mod is like paying through a picture book, my frame rate gets immensly low. Any reason this might effect bartering?

Deirdre is kind of wonky as it is; one of the patches supposedly fixed her somewhat as a trader, but as far as I know, she still never regains health and doesn't have the "protected" status of most other settlers, meaning that she'll eventually end up dead.
