Vertibird
I took the institute ending and I was wondering is there anything I can do so that the minutemen get the vertibird signal gernades

There are no institute vertibirds sadly.

I think there is a mod for that i.e. Minuteman Vertibirds. To be honest, in Survival mode, I can walk most places faster than I can walk to an appropriate landing pad, signal the vertibird, wait for it to arrive and land, board and take off, fly to the area I want, wait for it to find an appropriate landing spot then walk to my final destination. Near downtown vertibirds are almost worthless.

I would rather download the mod that let's you fast travel anywhere when you are in the institute vs vertibirds tbh in survival. It makes more sense.

there is a mod that gives the minutemen power armour and vertibirds, and also makes them go on patrols, like the Brotherhood does

I never liked fast travel even playing on Very Hard Mode. There's just something wrong with being on top a building in downtown Boston low on ammo, low on heath, and loaded with loot and magically being transported to Sanctuary. Having to walk everywhere just makes the game more realistic. Even in Survival mode when I get Vertibirds or Institute transport I don't use them. I have one Survival character that is > lvl 100 and I've never done any of the main quests so I don't have any fast travel options. Humping all over the CW like a vagabond needing to pay attention to what I need for my next upgrades and leaving the rest behind made the game far more interesting.

Why would you want to "summon" enemies?
when the Minutemen get the signal grenades, then a Vertibird with a Minutemen Pilot will appear

EDIT: If you are allied with the Institute, aren't you enemies with the Minutemen, thus summoning an enemy with a Vertibird?
you can only get the Minutemen to have a Vertibird when you defeated the BoS with them

Ah I see. So then if it's like the OP is asking about, they won't be summoning Minutemen with a Vertibird because they have sided with the Institute and if they do, they will be enemies as I said.
Probably yes, but without console commands it's impossible to get the Grenades, unless you did Show no Mercy for the BoS

Yes, one does, with one of those mods you can craft the signal grenades for Artillery and for Vertibirds on the Chem Station and you can buy both of them from Ronnie Shaw

W/c is why it would make sense if you could only do it in the institute because teleportation.

One interesting thing I ran across is that doing Rocket's Red Glare with the Railroad seems to lock the vertibird grenades in as being for the Railroad, even if you later complete The Nuclear Option with the Minutemen (which would normally make vertibird grenades call vertibirds manned by Minutement), with the result that they don't work. I'm not sure at what point in the quest it triggers this, but it doesn't require finishing the quest to lock it.

Anyway, there seems to be an internal setting for the faction associated with vertibird grenades, so if that was set to the Minutemen, it should allow Minutemen-crewed vertibirds to be called even if you were sided with the Institute. In theory, you could also have a mod that added a synth-crewed vertibird (or synths for a vertibird crew, depending on it's set up) and set the grenades to call that instead.
