Crossbows 101.
"Crossbows how do they work?"
Crossbows attack in two actions. First attacking with the crossbow will load a bolt. Light attacks and strong attacks with it will load the bolts associated with them.
Attacking with the crossbow a second time will fire the bolt. The bolt will fire straight forward from the character and be angled up and down based on the position of the camera.
Crossbows can be aimed at enemies in two ways.
1. You can lock on to an enemy and fire the crossbow that way.
2. If you two hand a crossbow and then hit light attack for the opposite hand the crossbow will go into first person aiming mode (much like a bow does).

Crossbows unlike bows don't get additional dmg from scaling. They also don't fire nearly as fast as a bow. So bows can potentially do more dmg and fire faster. Then what use is a crossbow?
Crossbows in comparison to bows use a lot less dex, which in turn helps str only builds use them as ranged weapons. They also can be used one handed unlike bows which allows them to team up with melee weapons, spell casting, and or shields.
But the most important role of a crossbow has to do with its two part fireing system. (Unlike ds2 where crossbows after being fired left you in a lengthy reload animation) In dark souls 3 crossbows fire and reload as seperate actions. This means a player can load a crossbow and switch it out to another weapon. Then during combat switch to the crossbow and fire it, and then switch back to there other weapon. This gives the player ranged dmg that can often surprise an enemy.
You'll get about 200 Lightning damage even with just a +6 Knight's crossbow and Lightnig bolts, along with the bit of physical. While there are certainly stronger and more practical weapons, it's very handy to keep in mind if you need some ranged elemental attacks.
