Faster classes like the merc work well. deprived is tough though.
What happens when he jumps up: You miss his attack with a well timed dodge (do not simply spam roll), roll back in, attack twice, roll out. Rinse and repeat. In phase two, keep your distance to force the boss to do this attack over and over again.
Also, you should be able to pick up some firebombs along the way. Phase 2 Iudex is extremely vulnerable to fire, just potshot away.
And remember: Don't get greedy with your hits, patience is crucial in outlasting a boss.
Good tips, from my view tho, I think his second stage seems easier if you stay pretty close to him. But I guess op will find his way.
Don't get demotivated tho, I started with thief and also had to retry for some time. :)
Starting as a northern warrior you can buff yourself with the weapon skill for damage, two handing the buffed axe for decent per hit damage.
Assassin is a great starting class if you can dodge and parry even halfway decent as it allows for quick damage.
Knight has armor and can take an extra hit.
It pays to be agressive, the shorter the fight is the less time you have to make mistakes, but don't get greedy. Always make sure you save enough stamina to roll out or away.
Another strategy that is just as valid, if not more so, is to git gud immediately.
