1.- Frost damage (Irithyl Sword)
2.- Parry
3.- Stagger (big weapons like clubs, greatswords, ultra-greatswords, Halberd, you name it)
4.- Backstabs

Yes, they are weak to Lightning and crits.

lot of weapons seem to stagger them for 2 hits then they can poise the 3rd and get a hit before you can roll
