Possible spoilers ahead for those not played through yet:
So if you take the Dark Sigil, and then level up (free mind you) 5 times, dying twice between each, then the special Dark Magic dude comes, Yeol dies (regardless). So now you have free 5 levels, and can buy extra spells..and you now hollow (who cares?).
If you go the other way, you don't get 5 free levels, Yeol dies anyway,and you dno't have the Dark Magic option...but you stay Human.
Seems like a stupid trade off? Why would you not take the Dark Sigil... (Doen't the Dark Sigil way allow you for the other ending though? maybe thats the big difference)
Okay well can you tell me specifically what else is involved? Must be related to actually using dark magic or something..as my char isn't a mage I never saw anything progress...even though I did buy ALL the spells he had.

There IS a cost...You just haven't figured it out yet, or come across it.
First off, five levels, no matter the price, will not have that much impact. Especually when considering the trade off and the costs of "fixing" hollowing that you'll later come across. Yes, doing so to access a new trader seems "like a no brainer", but I remind you that there's a lot more going on around Firelink than "these people are selling me shinies!". Certain people have agendas, and certain quirks.

There is an entire separate ending if you follow the entire hollowing quest line to its conclusion. Google dark souls 3 usurper ending and you can find information for it. Would rather not post spoilers here.
